Getting the best from the leaves
Naturally grown leaves change character a great deal with temperature and time.
Start from these guidelines and find what you like.
Sencha
70–80°C water, about 60 seconds. The cooler the water, the sweeter the cup.
Hojicha & Bancha
Boiling water, about 30 seconds. High heat draws out the aroma all at once.
Black Tea & Oolong
Boiling water, 2–3 minutes. Wait patiently and the aroma opens up.
Cold Brew
Leaves and water in a bottle, overnight in the fridge. No bitterness, just mellow.
